No-Bake Apricot & Almond Oat Slice

A chewy, nutty oat slice packed with dried apricots and almonds—gluten-free, vegan, and no baking required.

Ingredients

  • 2 cups (180g) rolled oats
  • 1 cup (120g) dried apricots, chopped
  • 1 cup (120g) raw almonds, roughly chopped
  • 1/2 cup (120ml) maple syrup
  • 1/4 cup (60ml) almond butter or other nut butter
  • 1 tablespoon chia seeds (optional)
  • Pinch of salt

Instructions

  1. Prepare Pan:
    Line an 8×8-inch (20×20 cm) baking pan with parchment paper, leaving a 1-inch overhang.

  2. Mix Dry Ingredients:
    In a large bowl, combine rolled oats, chopped apricots, chopped almonds, chia seeds, and salt.

  3. Heat Wet Ingredients:
    In a small saucepan over low heat, warm maple syrup and almond butter, stirring until smooth and combined.

  4. Combine & Press:
    Pour the warm syrup mixture over the oat mixture and stir until everything is evenly coated. Transfer to the prepared pan and press firmly with the back of a spoon to create an even layer.

  5. Chill & Slice:
    Refrigerate for at least 1 hour until set. Lift the slice from the pan using the parchment overhang and cut into 12 bars or squares.

  6. Serve & Store:
    Serve chilled or at room temperature. Store in an airtight container in the fridge for up to 1 week or freeze for longer storage.

Tips

  • For extra flavor, stir in a teaspoon of vanilla extract or cinnamon.
  • Substitute almonds with other nuts or seeds, like pecans or sunflower seeds.
  • Add a sprinkle of shredded coconut or dark chocolate chips on top before chilling.
