No-Bake Date & Almond Energy Balls

Quick and healthy energy balls made with dates, almonds, and cocoa—no baking or butter required.

Ingredients

  • 1 cup (150g) pitted dates
  • 1 cup (120g) raw almonds
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon chia seeds (optional)
  • Pinch of salt
  • 1–2 tablespoons water, as needed
  • Optional coatings: shredded coconut, chopped nuts, or cocoa powder

Instructions

  1. Process Nuts & Seeds:
    In a food processor, pulse the almonds and chia seeds (if using) until they form a coarse meal.

  2. Add Dates & Cocoa:
    Add the dates, cocoa powder, and salt. Process until the mixture comes together in a sticky dough. If too dry, add water one teaspoon at a time.

  3. Form Balls:
    Scoop out tablespoons of the mixture and roll into balls using your hands.

  4. Optional Coating:
    Roll each ball in shredded coconut, chopped nuts, or extra cocoa powder to coat.

  5. Chill & Serve:
    Place the balls on a plate or tray and refrigerate for 30 minutes to firm up. Store in an airtight container in the fridge.

Tips

  • Use Medjool dates for extra sweetness and better texture.
  • Substitute almonds with cashews or walnuts for variation.
  • These energy balls keep in the fridge for up to 1 week or in the freezer for up to 3 months.
