Butter-Free Pikelets

Light and fluffy pikelets made without butter, perfect for a quick snack or breakfast.

Ingredients

  • 1 cup (150g) self-rising flour
  • 1 tablespoon brown sugar
  • 1 cup (240ml) milk (dairy or plant-based)
  • 1 large egg
  • 1 teaspoon vanilla extract (optional)
  • 1/4 teaspoon salt
  • Oil or cooking spray, for greasing the pan

Instructions

  1. Preheat & Prep:
    Preheat a non-stick frying pan or griddle over medium heat. Lightly grease with oil or cooking spray.

  2. Mix Dry Ingredients:
    In a bowl, whisk together self-rising flour, brown sugar, and salt.

  3. Mix Wet Ingredients:
    In another bowl, beat the egg with the milk and vanilla extract until combined.

  4. Combine & Rest:
    Pour the wet mixture into the dry ingredients and stir gently until just combined. Let the batter rest for 5 minutes.

  5. Cook Pikelets:
    Drop heaped tablespoons of batter into the hot pan, spacing them apart. Cook for 1–2 minutes until bubbles form on the surface, then flip and cook for another 1–2 minutes until golden brown.

  6. Serve:
    Remove from the pan and keep warm. Repeat with remaining batter. Serve warm with favorite toppings like jam, fruit, or a dusting of powdered sugar.

Tips

  • For extra flavor, add a pinch of cinnamon or lemon zest to the batter.
  • Use plant-based milk to make these vegan-friendly.
  • Pikelets can be frozen in an airtight container and reheated in the toaster.
